Beef is often hung until the edges are off, then it’s trimmed and sold as healthy meat, without any lingering after affects. You can replicate this effect by thoroughly washing a slightly stale piece and enjoy the benefits of a mature steak.

I’m not a nutritionalist but the OP’s symptoms sound rather odd. I’ve only heard of that almost immediate behavior, following ingestion, being precluded by the assimilation of substances which were not organic. Unless the chicken was ‘bloody’ I’d look elsewhere for the source of your discomfort.

I agree, and I tend to look at the smoker more than the meat. Smoke on it’s own can be irritating. Too much smoke, the wrong wood or rotten wood might be irritating.

I would also consider the 7 layer salad, if it was like [this](http://en.wikipedia.org/wiki/Seven-layer_salad). With any cold dish that contains cooked ingredients (in this case, hard-boiled eggs), it’s essential that the cooked ingredients be cooled completely _before_ they are combined with the other ingredients.
