I’m not a nutritionalist but the OP’s symptoms sound rather odd. I’ve only heard of that almost immediate behavior, following ingestion, being precluded by the assimilation of substances which were not organic. Unless the chicken was ‘bloody’ I’d look elsewhere for the source of your discomfort.

I agree, and I tend to look at the smoker more than the meat. Smoke on it’s own can be irritating. Too much smoke, the wrong wood or rotten wood might be irritating.

I would also consider the 7 layer salad, if it was like this. With any cold dish that contains cooked ingredients (in this case, hard-boiled eggs), it’s essential that the cooked ingredients be cooled completely before they are combined with the other ingredients.
