Not a specific song, and I wouldn’t even call it a spoof. Homage, maybe, but really it’s just a pop song that incorporates various influences from pop history. Really, that’s what pretty much every song is. Even the great songwriting artists have their influences. Ditto all music producers.
I agree it’s got some pseudo sixites pop going on. The only specific song I think of right away, the bridge brings to mind “Come a Little Bit Closer” by Jay and the Americans which itself had a diluted pseudo Mexican thing happening. By the time that influence finds it’s way to “All About the Bass” it’s diluted even further, so I would definitely call it a 60s pop influence rather than a direct mariachi influence.
