But the serving size given is for a cup of those hash browns. So while not the same as the Chinese recipe, I think it is a good indicator of just how much fat is potentially used in home cooking. When I cook, I always use 3/4 less to zero of the oil/fat that a recipe asks. And that is a benefit to scratch cooking. You control how much or little fat and salt go into your food. You do not need to plan around the levels provided by the food manufacturer.

I do wish the show would provide the nutritional analysis of the food the school was/is providing as well as Oliver’s food because there are a number of factors that lead to obesity aside from processing. I’d be curious to compare those to the Oliver plan.

I think the Shaq show that ABC aired a few years back better showed the issue with school nutrition. The schools are teaching kids how to eat fast food. It is teaching that these types of food day in and day out is the norm. The schools don’t teach them how to cook, and don’t teach fitness. And it started with my generation (babies of the 60’s and 70’s). My parents never made take out a daily staple. But the school lunches did with crappy pizza and god awful burgers, pizza and breaded mystery meats. Just like you find at the drive through. And now, its a daily thing for parents out of price and convenience. There are no home economics classes anymore and PE is not mandatory for many kids. This is problem bigger than a crappy lunch offered at school.
