> I was curious, since the initial printing of Joy of Cooking was 1931, what kind of stuff has changed from one edition to the other (exempted are the whole “low-fat, less-rich” changes)?

Why would you exempt those? They reflect societal changes just as much as the tips about radiation.

I just figured they’d be a given. The '64 edition recommends drinking half and half for a “fattening up” diet.

Reminds me of Sterling in \*Mad Men \*after his heart attack. He’d been fearing his ulcer–which he’d been treating by drinking cream. (Supplemented, of course, with lashings of booze & ciggies.)

I inherited two different editions of Meta Givens’ _Modern Cooking Encyclopedia_. Some of the recipes reflect Depression shortages & wartime rationing. But they’re still useful.

Newest Prize: A pristeen copy of the 1961 edition of the _New York Times Cookbook_. Excellent recipes–lots of butter & cream, but one learns to balance a menu. Plus a touch of sophistication; Betty Draper probably has a copy.

Beaver Tail:

Hold over open flame until rough skin blisters. Remove from heat. When cool, peel off skin. Roast over coals or simmer until tender.

Unfortunately, no recommended side dishes.
