The Chef’s Choice 130 arrived over the weekend from Amazon. Last night I spent about half an hour sharpening every knife in the knife drawer, including one that is ceramic. Very impressive. I’m sold on it. I warned Mrs. Tango that they are all now very sharp. Even the serrated ones. The sharpening wheels are spring-loaded laterally, so you cannot put too much pressure on the blade.
When the Work Sharp Sharpener arrives I will simply return it.
The Chef’s Choice 130 looks nice enough to leave out on the counter. It’ll always be close by, so I’m confident our knives will always stay razor sharp.

ETA: regarding “sharpening every knife in the knife drawer”, before people jump all over me about that, I don’t toss my knives into a drawer where they can bang against each other. I have one of those knife blocks that fits in a drawer.
