I needed fried shredded potatoes (e.g. hash browns) as the base for a casserole, and wound up with a bit too much.

Any ideas for how to use 'em up in something tasty?

I was thinking some kind of vegetable hash in a pan, with onions etc. and throw these in towards the end, but that’s kinda my go-to for many “use up leftovers/fridge cleanout” nights. I could use a change. Any fresh ideas?

Mix them with diced onion, eggs and a bit of flour, patty them up and refry them. Kind of a savory potatoe pancake thing. I do this with left over mashed potatoes all the time, I don’t see why hash browns wouldn’t work.

My feelings:

- Don’t put them in something that will make them soggy.
- Avoid leftover hash browns, just eat them the first time. 🙂

Cook 'em up the next morning with eggs and bacon. Breakfast!

Do what I do (did it on Saturday morning) with leftover french fries: saute in a skillet with a half a chopped onion, some minced garlic, a few rashers of bacon (sliced in 2-inch lengths). When the bacon is cooked, add four eggs (scrambled), cook over low heat, adding shredded cheese while the eggs are cooking. Goes well with a couple of cups of coffee and a couple of slices of buttered toast.

Funny. My first thought when I saw the thread title was “make a casserole.” 😃

Too bad you don’t have any corned beef lying around. Corned beef hash is tasty.

Are they already fried? If not, could you use them as the base for a creamy potato soup? Google “Shredded Potato Soup” for a bunch of different recipes.

I second the burrito suggestion. Or make a nice potato pancake.

Yeah, potatoes, egg, and chorizo.

Or potatoes, egg, ham, bacon, sausage, cheese, salsa, some of those hot carrot slices, and a bit of Vegemite.
