I’ll have you know my Red Beans and Rice has received critical acclaim from some of the most backwoods coonasses you’ll ever meet.

Heh. I was going to ask you if you consider that term derogatory. 😛

Not at all. Of course, I was raised in the city, but my cousins don’t seem to mind.

I’d never use it, unless it was toward a Cajun friend. (And I don’t know any Cajuns.) But not when referring to a third party.

It’s pretty common down here. Now if you said “THAT COONASS MOTHERFUCKER!” That’s another story.

Well, all the options have been posted.

Except, cutting up small ham chunks to mix in the dog’s dry kibble. We have a strict rule about not feeding table scraps during our dinner. I can’t stand a begging dog. The dog eats at a different time and we’ll occasionally add something to her kibble,

Slicing it and freezing it for a couple weeks is a great option. By then it’s time for ham & eggs and ham sandwiches.

Spiral sliced ham is an inferior product. If you’re buying a small smoked ham like that get one unsliced and don’t overheat it, it’ll be a lot moister, better flavor, and end as better leftovers. I’ve actually quit putting them in the oven at all, it’s ten times tastier to slice steaks off the ham and brown them in a little butter, you’ll actually find more of the true ham flavor that way. My leftover ham goes into chef salad and disappears in refrigerator raids.

Since I buy my meats from a farmer just over the state border, all the meat I buy is frozen, including hams and ham steaks. Of course they’re freezer-packed, but they last a couple months in my freezer with no harm done. I also came in to second split pea soup, I make it with diced and browned ham steak and sausage. Mmm. (adds ham to next shopping trip list)

If the SO agrees to ham pizza, it will have red sauce, mozzarella cheese, and pineapple chunks.

If she doesn’t, then it will be red sauce, mozzarella cheese, pepperoni, mushrooms, onion, green bell pepper, and no-ham.

I made hashbrowns, eggs, and ham for breakfast yesterday. The SO didn’t eat ⅔ of her ham. I guess it wasn’t a hit.

She never plans ahead, meal-wise. I still don’t know if I’ll make ham-and pineapple pizza tonight, or pepperoni-and-mushroom.

After Sunday’s dinner we had two of those 25 oz. square, flat Glad containers of ham, plus a Tupperware container that’s about 15" long and 6" wide and a couple of inches deep. Between our second ham dinner on Monday, taking ham to work for lunch on Monday and Tuesday, the ham sandwich, yesterday’s breakfast, and taking slices a couple of times during the week, all of the ham is in the large Tupperware container now.

**seal Cleaner** : I agree with Dorothy Parker.

**jsgoddess** : Get some dough from Trader Joe’s. It’s only $1.29 and you can store it in the freezer. It’s not bad, and for $1.29 it’s worth it if you don’t want to take the time to make your own dough. Just the thing for when you think, ‘Now I want pizza.’

I suggest giving this a try (I’ve never heard of adding peas, though). If you haven’t made them before, learning to do so is very easy. I looked at a few recipes online and, predictably, they’re a bit unnecessarily complicated.

Briefly cook flour in butter, add milk, stir to break up lumps until it’s bubbling again and you have a smooth, stiff white sauce. Stir in ham, black pepper, salt and a little nutmeg, let cool, then refrigerate (it makes the sauce even thicker). Form the croquettes using two tablespoons, coat in beaten egg, roll in bread crumbs, fry and drain on paper towels.
