[hijack]I suspect that the weight that you could not account for is the weight of the water in the pork. The water listed in the ingredients is only the liquid water they added to the mix. The sausages are \>50% water.[/hijack]

Thanks - I agree. I expect some of it is what I think they call ‘dry matter’ too - mineral components of the meat and other ingredients etc
