Yeah, water could “drill” through a corpse. The intensity and focus of the spray counts for a lot - the more dispersed the spray the less likely this will occur.

Water soaked corpses have their own unique quirks - like when the epidermis rots off and you’re left with the lower tissues, which in these circumstances usually appear bleached-out white, even when the person in question is quite dark skinned. Heated water basically makes stew - not much different than putting meat in a crock pot, really. Cold water will tend to slow down decay.

Hair really tends to last - it’s one of the last things to decay.

Then there’s the phenomena known as “coffin wear” - when vibration wears away at a corpse, leaving interesting defects that have, at times, been misinterpreted as foul play.
