Welcome to the Straight Dope Message Boards, **sas61** , glad you found us. A couple of points: (1) This forum is for comments on Cecil’s columns. The material you quoted in red, I am unable to locate as either a column or a staff report. Can you please tell us where this is from, so that we can respond reasonably? (2) In internet typography, all upper case letters is presumed to be yelling or screaming. This explains **lawoot** ’s comment, if it puzzled you. No problem here, I’m just trying to educate you, assuming you are new to this. (3) On this Message Board, we tend not to like the use of 2 for “to” or U for “you.” Hopelessly old-fashioned, I suppose, but most of us find that texting short-hand hard to read. ---

As this is about food, shouldn’t it be in Cafe Society? I make my own mayo using a blender. Never had it fail, tastes great. ---

It’s kind of a random thing for a new OP to come in and post, but it is [pretty much correct](http://www.nytimes.com/2008/07/01/health/01real.html) that commercial mayo has an undeserved reputation for causing food spoilage/poisoning, when in fact it is an undesirable environment for food spoilage bacteria. It’s more likely the other ingredients that cause problems. ---

Icebox? You sure you’re just 50 years old? Anyway, you need to put mayonaise into the refrigerator after it’s been opened. Refrigeration of any amount, in any order, will only increase the life of mayonnaise. You are safer putting it in the refrigerator and taking it out than never having put it in. ---

It makes sense. When you buy things at the supermarket, pay attention to what’s in the refridgerated section and what’s not. Personally, I always put stuff like Mayo and Ketchup and Mustard in the fridge, but that’s mostly out of habit, you can leave those stuff out just like at the market. ---
