Why did it take forever for the world to realize cow manure was better for farming than human poop?

Continuing the discussion from Medieval Monks were Riddled with Worms, Study Finds: Ive read in various sources that parasites were a leading cause of death in the medieval and ancient world because of the use of human poop as a crop fertilizer (which is still a thing but it’s sterilized before such use) But it seems that no one caught on to the fact that cow poop was more useable and safer until the 1500s or so why so long ?
