spellcheck wants me to spell color as colour. I went to settings and I have my language selected as **English - US** and not English - UK so what the heck? ---

I think the spell check is done by your browser, not by GMail. For Firefox and Chrome: Right-click in a blank area of the text box in GMail. There should be options in there about what language to use for spell-check when typing. ---
