well, that is the reason-to-be for all those national treasures … be it pizza, quiche, paella … it was historically always about recycling food - for the same reason all those come in dozens of flavors and types … ---

I used six eggs this evening. I made a big batch of chocolate chip meringue cookies for new years Eve, and used the yolks to make pasta carbonara. 6 egg yolks 1 lb pasta 0.4 lbs bacon, chopped into pieces ~1 cup grated Parmesan Black pepper Put the egg yolks into a large bowl that you’ll serve the pasta in. Cook the bacon, heat the water for the pasta, grate the cheese. (I used a little food processor.) When the bacon is cooked, and the pasta water boiling, whisk about a tablespoon of the grease into the egg yolks, add the bacon, a lot of ground black pepper, and stir it well. Cook the pasta. Strain it, reserving about a cup of the cooking water. Dump the still-hot pasta into the eggy mess and stir well, to cook the eggs. Add about a quarter cup of the hot pasta water (or more, to taste) to thin the sauce and make it creamy. Dump about 3/4 of the cheese into the bowl, and keep stirring until it melts in. Serve immediately, with the rest of the cheese and additional pepper. ---

I just picked up this idea from the appetizers post/thread, and I’m going to try it: make deviled eggs with avocado. I have some hard-boiled eggs and mild guacamole on hand, so methinks I’ll give it a whirl for my New Year’s treat. ---

The last of the eggs. We did use them up more quickly than I thought. They were finished before I got to the Deviled Egg portion of the eggathon. Pork Belly Ramen. Look at them eggs!
