I think it’s “That’s the hand you use” (the generic “you”) - and it’s “never mind” because he can’t finish the thought (which is “to wipe your bum” (back in 1980 or so, an old fellow noticed I was left-handed and said [“that’s the hand the devil uses to wipe his ass!”](https://boards.straightdope.com/t/20-of-the-population-is-lgbt-its-just-that-this-identity-was-suppressed-in-the-past/982963/85)) ---
