# (Old) Did Everybody Retire In The MMP?

The weird thing is Sara Lee says different ingredients in different places on their site about their everything bagels. Both of us are copying but Sara Lee isn’t consistent. Maybe chia seeds are cheaper than poppy seeds so that’s how Sara Lee gets the right look while lowering their raw material costs.

But without real poppy seeds it ain’t right.

We have a cauliflower crust at work for the gluten-free option.

Having eaten both, they are … not interchangeable in flavor.

Having bought chia for the ratties … if that’s cheaper than poppy seeds, then holy 👿 imma start an opium farm.

Not really IMO. Then they have to deal with the overloaded kitchens which means my food comes hours later if at all.

Instead I went to a favorite Mom’n’Pop diner, figuring few people would think of that as a source for an Easter feast. I got there around 1230. They were typically busy for noonish on a Sunday but nothing crazy.

It’s a scruffy little joint (4 2-tops outside, 4 2-tops inside plus a couple of 4-tops), but the owner is a genuine French-from-France Chef who retired after selling his last real restaurant, got bored, so bought this dive as his retirement hobby project. Ten years on he’s now mid 70s and only actually works the kitchen himself 2 or 3 days a week. But everything has a French flair.

I chose the breakfast Easter special. Which was 2 eggs, a slice of ham with Marsala wine sauce, French-style scalloped potatoes, and toast or grits.

The ham was a hefty thick slice (10+ oz) off a real bone-in ham that I saw nestled in a roasting pan in the exposed kitchen. The potatoes were a big casserole pan of super-thin slices layered horizontally w cheese & béchamel; like a potato-based lasagna. The slice I got was almost 2" wide, 3" tall and 8" long with a hard crunchy cheesy wonderful top crust. Oh yeah, and every special on every weekend comes with a free Mimosa. Not bad for $15.95. Cheers! Oink! 🥂 🐷

Anyhow, to loop back to Door-f-ing-Dash. …

As I walked up to the outside tables there was a couple seated next to the table I was going to take. The evidence was they’d ordered and were waiting for their food. So I sat down, got my coffee & water, then Doped for about 20 minutes before ordering my meal. So far so ordinary for me; eating out alone is a slow process.

At which point they asked the waiter what was the hold-up as they’d ordered quite awhile ago? He said the kitchen (2 guys working in an overgrown broom closet) had just finished a ginormous doordash order and would be starting in on their and other waiting in-house orders about now.

Sure enough, about 5 minutes later their and my food appeared almost simultaneously, despite at least 20, and maybe 30, minutes elapsing between their order and mine. A few minutes later a car pulled up and a guy got out with what looked like an overgrown double- or triple-sized milk crate. Which he carried into the store. We watched as he made 3 trips from car to kitchen & back with his crate, filling his car trunk to overflowing with bagged take-out containers. Probably 30 meals there.

Then he drove off. To deliver a now-cold Easter brunch to some group that had been waiting an hour or more already.

Boy do I not understand why anyone would use that service. And boy do I hate what it does to sit-down service in restaurants. You can’t tell how busy or how backlogged they are by looking around the room. And the delivery companies have the restaurants by the 'nads and demand their orders have priority over the in-house ones.

My experience is they aren’t bad. It’s not the same as bread-based crust, but it isn’t gross. It might in fact be gluten-free but it totally is _not_ low-carb or low-glycemic.

Yeah.

As between cuddling an infant and cuddling somebody of the appropriate body type much more my age I’ll take door #2 every time. Far more fun and much more restorative. 😁

It’s not ANY of those things. Hilarity ensues when someone gets a gluten-free and then loads it with the fattiest toppings.

“Hi. Can I get a gluten-free? With sausage, bacon, uh … pineapple, oh, and ground beef?”

“Uh. .. sure.”

Kitchen: { _dafuq?_ }

Me: _shrugs_ “That’s what they wanted.”

I stand corrected. I eat them at my daughter’s because she has celiac disease and gluten doesn’t cross her threshold. I haven’t ever closely read the nutrition label obviously. Mea culpa twice-once for **oopsie** , once for **pilot**.

The premade cauliflower pizza makers must mess up the carb balance with hidden added sugar in the sauce (added sauce sugar is everywhere 😡) or in toppings or how they bind the cauliflower into a crust. Having looked it up, a cup of cooked cauliflower does have 5 grams of sugar, which somehow surprises me considering its low level of appeal to me. I can have a cup and a half of cheerios for only 2 grams of sugar. No contest-cheerios or cauliflower then. Granted, cheerios wouldn’t make a very good pizza crust. Back to the drawing board then.

Walmart sells 2 pounds of chia seeds for just under 9 dollars. Oh! [Nuts.com](http://Nuts.com) will sell us poppy seeds for 6 dollars a pound.

Of course if you buy a wee little one or two ounce spice rack bottle of poppy seeds at Walmart or Target that cute packaging and sprinkle top will cost yah three bucks and up.

But sausage, bacon, pineapple, and ground beef are all gluten-free. The total including the cheese and tomato-based result might be high fat, high calorie density, high carb, and highly glycemic. But it will be gluten-free.

Which might be useful (ref **BBoo** ) for people who actually care about gluten as such.

But yeah, if “gluten free” is just the new fad supposedly healthier way to eat, then I sure agree these fools don’t know from healthy. But they do know their fads.

You get it. My daughter has to be vigilant about gluten in all its forms, many sneaky and unexpected. Her celiac disease can put her in the hospital if her guard drops in the slightest. People think they know how to do ‘gluten free’-very few actually do, including 99.9% of the restaurants offering gluten free this or that. Being safely gluten free is as complicated as being orthodox kosher. Both requirements have my respect. It ain’t easy to do right.

Another agree. Not unlike my pet (my wish to take my pet everywhere) is a service animal (your wish for your pet doesn’t make it a need). .

I must concur, I’ve never found a decent cauliflower crust. (And reading further down the thread, this might be an option for your daughter **BBBoo** )

If you like mushrooms, I find them to be a _much_ better alternative. Take a large portobello mushroom, scrape out the gills, and cook formerly-gilled side down at 450 for about 7 minutes. The main thing is to get excess moisture out of the shroom and start the cooking process, so timing will vary. Flip it over and fill with sauce and toppings of choice and then back in the oven until cheese is nice and melty.

Just popping in for a few inane Public Service Announcements:

1. **Taters** , all my very best to you. You’re exactly the sort of civil servant this administration wants to get rid of: Conscientious, dedicated, smart, will work yourself to the bone on principle because it’s The Right Thing to Do and so much more. I’m sorry your career came to an end in a way that was beyond your control – but it _was_ beyond your control as I’m sure you’re aware, and they would have gotten rid of you one way or another. So best to have done it on your own terms. Enjoy – nay, savor and revel in! – your well-deserved retirement, and don’t second-guess yourself. You are a star, and that never changes.

2. Happiest of birthdays to you, **Metal Mouse**! You are always so kind, generous of spirit and cheerful. Your posts bring smiles to my face every day, and it is appreciated more than you know. Enjoy every minute of your special day!

3. To everyone suffering from assorted and sundry owies, I am glad you are on the mend! You all bring your own wonderful _je ne sais quoi_ to the Mumper Motley Crew. Keep healing and feel better soon!

4. To those who couldn’t drop the topic of bagels, thanks. Thanks a lot. They are now baking in my oven. Not really on my food regimen, but… there are lots of excuses reasons to make today special. And now it looks like I need to make some smoked salmon later this week.

It was _tres_ yummy. The Marsala sauce was not something you’d expect to find with ham, but it was a great combo.

It helped that I ordered about 50 minutes before they were closing for the day. So I probably got a double serving of both ham & potatoes that were otherwise going to go to waste. So instead they went to waist. 😉

You’ve listed a pet peeve of mine, which I’ve intended to post as a mini-rant, but have forgotten to until I saw your post. I’ve put up with this many a time, and it’s getting really old.

Okay.  
Updating.  
I stopped going to my former church 3 weeks ago. I just couldn’t. They think its a sin to have musical accompaniment to worship.  
Also one canNot be saved til they are baptized.  
It took me a few years to find a church after I got saved so supposedly I was still in my sins until I found a church and got dunked.  
First church I ever went to thats in error like that.  
This one is nice.  
Today they had breakfast- hash browns, pancakes, eggs, fruit, etc.  
I took some in small containers.  
Then the pastors wife invited me and others to her mom in laws for lunch, which was ham, prime rib, potatoes, dark carrots.  
I think I weigh more.  
I unfriended church guy as he never messaged me unless I messaged him first and when I said morning, he didnt reply.  
Its a cool 56 degrees here.  
I wore dress👗 for the first time in decades ( of course yoga pants underneath.

No worries at all. I knew you didn’t. You and your bonked brain get a total pass. Besides, doing anything on an iPad is 10x harder than on a PC with a real keyboard and a real screen.

But I wanted everyone else reading to be sure to see the distinction between my blathering and your wisdom. Plus, TPTB around here are fussy about quoting errors and I’d rather pre-emptively protect you from them.

Breakfast at church this morning. There were assorted pasties, jello, apple sauce, quick oats (not steel-cut oats), brown sugar, cheesy egg casseroles with Bisquick… In other words, things I don’t eat. They _did_ have deviled eggs and cold hard-boiled eggs. So I had four devied eggs and four hard-boiled eggs – in other words, six eggs. And two cups of coffee.

The Easter ha is in the oven. I went ahead and made the potatoes au gratin and put them into the oven. I usually cook them at higher heat for a shorter time, but I’ll give them a head start before I do that.
