Three stories, wow. The stairs. I’m sure you have a super cute place, but all those stairs aren’t great for old farts with iffy balance. Yes, I know that oats are a grain but I classify it the same as almond milk. Nut juice doesn’t react like cows milk. I’d think you would need to add thickening agents to get it to set properly. I have made non-dairy cheese in the past for a pizza place. It didn’t really look like cheese, but it could be grated and it did melt.
