[Generic British pancake recipe](http://www.bbc.co.uk/food/recipes/database/pancakebatter_13556.shtml). Make sure the pan is really hot. And you have to toss the pancake - no using a spoon or spatula. Flip it out of the skillet onto the other side. Then sprinkle with sugar, and squirt lemon juice on it, and roll up. (Or the other fillings above.) MMmmmm. Me, I’m avoiding wheat, so I had a really thin omelette with truffles, jalapeno and spinach. But them I’m a wild-eyed loner at the gates of oblivion. ---

She’s normally very good with new food. ---

[/QUOTE] I didn’t realise this was the Daily Mail forum 😉 We ended up with a couple of burns - nothing 5 mins under a cold tap won’t fix - and one lad had to avoid contact with milk and eggs, so he was in charge of sqeezing lemons. Excellent night - I even let them cook me a pancake - although getting them to wash up afterwards was a challenge! ---

I’m going to try making birch syrup, I think - silver birch sap can be tapped and used in exactly the same way… Just need to find an unsuspecting tree… ---

I didn’t have time for pancakes yesterday so I am going to try to make some on my day off, friday. I’m thinking of finally trying out my Aebleskiver pan. I’m not Danish but the idea of a pancake cooked into a puffball appeals to me. I watched Craig Ferguson last night (I love that man) and he was talking about all the different kind of pancakes and wouldn’t it be nice if there were some place that served all those different international pancakes under one roof? They could call it an International House of Pancakes. But the actual IHOP doesn’t really serve anything but American style pancakes and maybe crepes. And Belgian waffles which aren’t really pancakes because they’re waffles. Great, now I’m hungry. ---

I wonder if it gets cold enough where you are. Isn’t maple syrup harvested in Vermont and Canada in the winter time because the sugars don’t develop until it gets really cold? Or something like that?
