There’s already some fabulous ideas here, already, but I had to add one thing. The Breakfast Buffet at Paris. A little pricy, but ever-so-worth-it. Fresh-baked croissants, a crepe bar, seafood quiche, and all kinds of fabulous French cheeses. It’s always a stop for us when we’re in town.

If the weather weren’t so yuck, I’d recommend highly going up to Lake Mead and going waterskiing. We did it a couple of Novembers ago with some guys from British Telecom – they were in awe:
Save it for next time – or go tour Hoover Dam – that’s an engineering marvel.
OTH, I’m amazed by the suggestions because the new locations (Hotel de Paris) add so much to the experience.

If you don’t want to splurge every morning on the buffet at Paris, they have a shop where you can buy sandwiches and desserts. It is not all that well signed, but they sell just bread, too. Now here’s the real kicker–you can get butter and jam for free. It is a wonderful cheap breakfast.
Do not worry about finding enough to do for free/cheap. We don’t enjoy gambling, so we spend all our time doing the kind of sight-seeing that Nvme77 mentioned. It takes a while to get from place to place, so you can’t do that list in one day. Oh, and when you are there, find the free trams that connect a lot of the hotels. They are a life-saver. One more he didn’t mention–the free zoo at the Flamingo. It is worth a wander over there.
I’ll second gatopescado’s recommendation of Red Rock & Valley of Fire. Both cost a few dollars for Park (State of Federal Park) fees I believe, but they are both beautiful. Take a camera!
Also, there are old-west ghost towns within an hour’s drive of the city I believe.
Rick Thomas does his magic show across the street from the Luxor & Mandilay Bay at the Tropicana. I saw him when I was there in '99 and enjoyed it. His shows are during the day and only cost $17.95. It has white tigers and other animals. It was nothing near as elaborate as what Siegfried and Roy were doing until recently, but if you have a good streak at blackjack or the slots you can enjoy that show ‘on the house’ with the winnings.

Ronn Lucas at the Rio and Mac King at Harrah’s. Inexpensive afternoon shows, and when I went in October they had coupons at the Rio buffet which got you into both shows for the cost of a drink ($7.95 & tax IIRC). Ronn Lucas is a ventriloquist and Mac King is a magician, and they’re both hilarious. There’s also a free Masquerade show at the Rio.
