# Potato Salad

Love Southerrn Snap Green Beans boiled all to hell with bacon, potatoes, onions, and salt pork. Maybe serve them warm with some warm greens and smoked turkey neck collards with a vinegary Carolina pepper sauce mixed with some Colman’s ground mustard for some Southern BBQ accoutrements. A new twist on Greens or potato salad. Probably has more in common with nicioise, which I naturally consider a Potato salad. Seafood and Potatoes are a perfect match… think I’ve seen some boiled new potatoes and smoked salmon potato salads for you PNW’s and Michigander’s UP’s.
