A white, **tasteless, odorless** protein precipitated from cow’s milk by rennin that is the basis of cheese and is used to make plastics, adhesives, paints, and foods. Obviously all those different cheese tastes can’t come from the same source. Turns out to be pretty complicated [how they get all the tastes](https://www.reddit.com/r/AskCulinary/comments/18ytba/why_do_cheeses_taste_different_what_makes_the/) - bacteria, sugars, mites, moulds, sweating. So that blessing for the cheesemakers…well earned. ---

The restaurant we go to in Switzerland has one of these running all night. If you order a raclette you are brought a bunch of accompaniments (little jacket spuds, charcuterie, cornichons etc). They then start scraping off the top layer of melty gooey delicious raclette and bringing it over to the table. For bigger parties they wheel a dedicated machine over to your table and you all have at it either until it’s gone, or until the first person explodes. It is not a light meal. ---

A group of researchers actually spent time and (hopefully not too much) money on a study that concluded people (based on a survey) really like chocolate, cake and pizza. I am stunned, and hope that legislation is passed soon to keep this from happening. ---

Way back in the day we got gubment cheese. Well to be honest I don’t recall if WE got it or people we knew got it. But I do recall that the gubment cheese was some of the best damn cheese I ever had. I suspect it was good stuff to start with. Then it sat in a warehouse for Og knows how long. Then it got distributed to the po folks eventually. Does the gubment still buy and hoard cheese and eventually give it to the masses? ---
