Quick question about Spinach

Sag aloo. Spinach and potatoes. Potatoes and spinach. Aloo sag. Sag aloo.

This is how it’s done.
Peel a centimetre long bit of root ginger and chop it into julienne strips.
(optional)Chop an onion finely.
Chop a clove of garlic finely
Dice your potatoes
Fry the ginger in a tablespoon of vegetable oil to get it crispy.
Add the potato cubes (and onion if using) and fry until they brown a bit.
Add the garlic and stir
Add some roast and ground cumin and coriander (about half a teaspoon of each, I’d guess)
Add about half a teaspoon of mustard seed. It’ll pop.
Add half a teaspoon of turmeric and stir a lot
Add some chopped chili if you want. You could add some red pepper cut in strips too if you wanted.
Put in your washed and destemmed spinach. Use quite a lot, as you’ll be aware by now that it shrinks.
If you’re worried about things sticking and drying, you could moisten the pot with a tablespoon of water before the spinach goes in.
Put the lid on and keep the heat on high for a few seconds to raise up some steam
Turn the heat down low and leave for 10-15 minutes (depending on the size of your potato chunks)

Serve with chappatis and a dish of yoghurt with salt and cumin on top.
