> Oddly, I am a big fan of **The Oxford Companion to Food** , but it is currently out of print. I second a subscription to **Cooks’ Illustrated.**

The 1st edition may be out of print but the second edition is alive and well (check out Amazon)

I have [The Food Lover’s Tiptionary](http://www.amazon.com/Food-Lovers-Tiptionary-Shortcuts-Cookbooks/dp/0688121462/ref=sr_1_2?ie=UTF8&s=books&qid=1231824873&sr=1-2), and have gotten a lot of valuable information out of it. It’s a great quick reference.

They have a [newer version](http://www.amazon.com/New-Food-Lovers-Tiptionary-Shortcuts/dp/0060935707/ref=sr_1_1?ie=UTF8&s=books&qid=1231824873&sr=1-1) that I haven’t checked out yet.

All you people should go to [Wikia.com](http://Wikia.com) and start a free online Food Encyclopedia. I’m sure it’ll be just as good, if not better than anything you find on the web

Huh, I think the latest edition of the Joy of Cooking isn’t too bad. I didn’t notice an anti-fat bias in my version (2007 or so).
