# Red Velvet Cake: Haute Cuisine dudgeon

I made a red velvet cake with pink icing from scratch on Valentine’s Day for Angie and the nice ladies next door. When I mentioned to our neighbors that I wanted to share with them, the gourmand insisted not to use too much coloring because she did not want a blood-red cake. I found that a tablespoonfull works just fine.

P’raps I’m missing something. I’ve never made a red velvet cake, but the multitude I’ve eaten don’t taste chocolately to me. The icing (which is white) seems to be cream cheese-based, with pecans mixed in.

I beg to differ. It _does_ come out of your anus, and scares the hell out of you in the process. Don’t ask me how I know (though you can probably figure it out).
