Roasted leg of lamb?

I’ve never cooked lamb (or tasted it) but reading these recipes made me wonder—can you buy mashed garlic paste in a tube like they sell tomato paste?

They crisp up better if they aren’t too crowded. And liquid from the lamb can make them soggy.

Spike with rosemary, salt the surface, and roast. Simple and delicious.

What’s a semi-boneless leg? I only know them as with bone, or without.

I think it’s an American thing? I certainly never saw it in Australia, where we appreciate a good leg of lamb!

Basically, the butcher removes the hip and femur bones but leaves the shank bone attached. Makes carving a bit easier.
