Or, if you’re feeling brave, and the lamb is reasonably fresh, MAKE THE KIBBEE NAY (i.e. make the kibbee but don’t cook it. It’s how the Lebanese eat it!)

If you use Alton Brown’s recipe, it’s better than nice: it’s terrific. Use about a pound of ground chuck to 1/2 pound ground sirloin and 1/2 pound ground lamb.

Also, lamb kebobs are excellent. Serve them in pita with a cucumber yogurt sauce.
