Hey, now. My mother has a rather extensive collection of church cookbooks from various places in the midewest (and many other cookbooks put together as fundraisers). I don’t know about other parts of the country, but Velveeta fudge is pretty common where I grew up, and each cookbook has at LEAST one, if not several, recipes for it. Now, I likes me some processed cheese product (although velveeta is but a small candle compared to that 200 watt bulb that is government subsidy cheese), but I try not to think about it when I eat the fudge. It just seems wrong.

Perhaps it’s just cultural chauvanism rearing it’s ugly head, but when I read about “Velveeta Fudge” with a recipe I swear to God the first thought that popped into my head was “White folks.” Followed by my slowly shaking my head, with visions of Wonder Bread mayonnaisse sandwiches and lime Jell-O molds with raisins suspended in them floating in my head.

I like it in omlettes (as previously mentioned). My mom used to make a cracker spread with mushed velveeta (well, the Aldi’s version), garlic powder and finely diced onions. Yum (at least that’s how I remember it)!

That said, I can’t remember the last time I’ve had the stuff. But now I want an omlette.

Ah, the Velveeta of my childhood. It’s been awhile. Mauvaise is right, it makes great grilled cheese. Melts nicely over vegetables, too.

We used to cut it with string (it sticks to knives) and use the boxes to store broken crayons. I think the boxes have gotten flimsier with the years, though.

Velveeta and crayons. Sorry, I’m having a fit of nostalgia. Oh, yeah. . . drop cubes of it into tomato soup and kids love it. They can either eat the warm and mushy blobs or stir them in, making streamers, or both.

Podkayne,

You made me vomit a little in my mouth. I’ve never had anyone do that on these boards before. And I ate a Filet O’ Fish about an hour ago. The very thought of cheese-food fudge, mixed with Filet O’ Vurp taste in my mouth is way too much for a Saturday night. Thanks.

In other words, why do you hate me?

By your logic, then…should I feed Velvetta to my Gouda? My English blue won’t touch it. Snobby British blue blood food!! (Shaking fist at hunk of cheese) – trying to clear those thoughts of Velvetta fudge.

It’s my husband’s cheeselike-product-of-choice for grilled cheese sandwiches, though, so we always have some around, and it disgusts me to see it sitting there in our refrigerator. The respectable cheeses edge over to the far side of the dairy bin and eye the Velveeta suspiciously, and rightly so.

Amen, amen, AMEN.

It’s NOT cheddar, it’s not cheese. If a person likes it, that’s great, but it is NOT cheese. (sorry, i am a real cheese addict, and I have had a really hard time since I moved to Texas, and visit MO, in making people understand what “cheddar” really means. It’s amazing how many restaurants down there that think that american and velveeta are the same as cheddar).

Plus it sticks to your teeth in a really unpleasant “plastic-y” way. (shudder)

You have your categories confused. Velveeta is “pasteurized process cheese **product** ”, Kraft’s poor white trash cousin of cheese, which means that it contains less than 51% actual cheese by weight. The rest is mostly water, whey, and whey protein concentrate.

“Process cheese **food** ”, a higher desgination, contains at least 51% cheese. Kraft Singles are in this category.

“Process cheese”, the top category, contains only cheese and emulsifying salts. Kraft Deluxe American is this category.

Actually, it’s “pasteurized prepared cheese product” – nowhere is “food” mentioned in the description. Make of that what you will.

You could make Cheesy Brocolli Casserole:

Velveeta. Chopped Brocolli. Chopped onions, cooked. Rice.

Mix well, throw in a casserole dish and bake.

I’m sure there’s a more detailed recipe somewhere on the net. It’s yummy.

I want to make Velveeta Fudge just to watch people freak out when I tell them what’s in it.

Velveeta and broccoli? I’m writing the Pope. If that’s not a Sin Crying Out to God for Vengeance, then, dammit, it should be. Broccoli is a wonderful vegetable. Velveeta is not even a food substance. The two should never come near each other.

 Let’s be accurate: adding chunks of Velveeta to any cream soup makes a Velveeta cream soup. The word “cheddar” absolutely belongs nowhere near the word “Velveeta” and the word “good” is editorial, at best.

Velveeta breaks one of my crucial food rules: don’t eat crap that comes in a box. Food does not come in a box. (Cheese, especially.) Food especially does not come in a wrapper inside of a box. If your kitchen contains a number of items which you plan to eat which are currently in a box or worse, in a wrapper inside of a box, you should really reconsider your diet in a very serious way.

Shrug. There are countries where _eggs_ are sold unrefrigerated. They keep for longer than you’d think without refrigeration. Doesn’t put me off eggs.

I don’t pretend Velveeta is a real cheese, or that it’s gourmet cuisine, but for what it is, it’s good. And Velveeta fudge is unexpectedly tasty. I used to make a double batch of it, cut it into small pieces, and sell it at ten cents a piece for our Model United Nations Club bake sale in high school. (As “flodnak’s secret-recipe fudge”, mind you, not “Velveeta fudge”.) People would come and buy one piece, then come back for five or six more.
