I went to a latino supermarket today and bought a couple of pounds of guavas. They were enticing me with their lovely tart and gamey fragrance, but now that I’ve got them home, I can’t really track down any recipes for how to deal with them. I cut one open, but the center is mostly very hard seeds, and the seeds are surrounded by a meager amount of spongy but tart and tasty flesh.

My kitchen smells like a heavenly tropical farmer’s market, but I can’t figure out what to do with them. Who’s in the know?

Emiril uses them as a [glaze for pork](http://www.foodnetwork.com/food/recipes/recipe/0,,FOOD_9936_31397,00.html). So does [Bobby Flay](http://www.foodnetwork.com/food/recipes/recipe/0,,FOOD_9936_27930,00.html). Browse the site until you find something you like. Personally, I dice them up and use them in a fruit salad.

Make [guava cheese](http://indianfood.about.com/od/sweetsanddesserts/r/guavacheese.htm). I was brought up on the stuff, from my Caribbean grandmother. It’s fucking delicious, with a comically disgusting name.

You eat them - rind, seeds, and all.

What he said, guavas are the perfect food and need no enhancements, kinda like Chuck Norris.

On the other hand, maybe you ought to take it easy guavas are known to cause constipation.

I like mine sprinkled with _either_ cinnamon or chilli powder.
I have also sliced quarter inchish thick strips, drizeled with olive oil, and lightly grilled to use as a bed for a good whitefish.
Hi Teela!
