Sort of random, but here are the results of my expedition into bread making and my brother (the chef)'s recommendations:

> [@Me](#):
>
> I just tried making my first batch of baguettes yesterday and thought I’d see what all suggestions you had.
>
> The ones I made ended up perfectly edible but really thick (as opposed to airy and fluffy) and they have sort of a strong flavor that I believe is the yeast. I only let them rise for about two hours.
>
> Is it simply an issue of having not let them rise longer that they’re so thick, or not enough yeast perhaps? Would adding more salt counteract the yeasty flavor, would fluffiness fix it by itself, or do I just need to shop around for a different yeast?

> [@Rat Bro](#):
>
> I can’t help you with your baguette issues, unless I know what you did.
> Generally speaking, tough bread means that you overmixed it, though. You might want to knead for less long, next time. Also, a hotter oven could help, initially, then reduce the heat when the bread has risen in the oven and appears to have “set”.
>
> As far as letting them rise, you should only need about 45 minutes to rise, not two hours. However, 2 hours is fine if the space wasn’t very warm. Rising is called “Proofing”, and if you over proofed your dough, then that could also explain why it was tough, in that when you baked it, your yeast had already done most of its work during the initial rise and only had a little muscle left, rendering your bread flat and tough. Again, without knowing EXACTLY what you did, I can only guess. 2 hours is fine in a cooler environment. 2 hours is a really long time in a warm environment!
>
> The amount of yeast is also hard to know. I’m assuming you followed a recipe, but perhaps you used the wrong kind of yeast. Did you use fresh cake yeast? Powedered yeast? Quick acting?
>
> What kind of yeast did the recipe recommend?
>
> Adding more salt will increase the yeasty flavor and will actually make your break even tougher.
>
> In general, yeast is what gives your bread it’s “air pockets”. It’s converting the sugar in the flour to carbon dioxide and alcoholm and this get’s caught in little pockets due to the gluten in the bread. The warmer the environment, the quicker it does this. Once it hits a certain temperature, that’s too hot, the yeast is killed and stops doing it’s job. If memory serves, this is around 145 degrees. The GOOD news is, this is also around the same temperate that the stabilizers in your dough also begin to set due to being cooked. This is what you WANT to have happen.
>
> The colder it is, the slower this process happens. So, it’s ok to do it colder, it will just be a slower process. For example, if you used cold water in the dough, it’ll take longer to rise, than had you used water in the 110 degree neighborhood.
>
> Salt kills yeast. So, the more you add, the less leavening you’re going to get from the yeast. Also, salt is a flavor enhancor, so the more you add, the stronger the taste!
>
> There are many many many factors in baking bread that all need some level of balance to work. For example, rather than adding extra yeast, you “could” add a touch of honey, to give the yeast more sugar to eat. This will give you a touch more leavening power (and potentially a better flavor!).
>
> I have zero idea if this will help, but it might give some clues. I’d need to know more about what you did to give a better evaluation on where you were right and wrong.
>
> The best advice I can give is read a book about baking, and practice, practice, practice! Baking is more science than art, but it takes some understanding of the ratios and reactions of the parts to really do it up right. Additionally, the more you practice, the more you’ll get a sense for the feel of dough.
>
> Or, you could just buy it at the sto’!

Pool party at **Pug** ’s place! I’ll bring the canoes!

I washed our Idiots in the bathtub _once_. That was enough. From now on, they get it done somewhere else, _by_ someone else!

Yay for coconut cake! I’m partial to just about any type of cake as long as it’s not dry, but a good coconut, carrot, or rich chocolate cake are the very bestest! And cash is always the best birthday present. 😃

Poor embarrassed kitteh! You just know that expression is saying something between “Kill all the humans!” and “Kill me now, please?” Only lolcatted up, obviously. I’m no good with lolcatting; would someone else do the honors? Because that photo really needs it.

Yay for turning off the AC, hopefully for the last time this year, and opening the windows wide! It’s a bit warm today but the humidity is low and there’s a nice breeze, so I’m enjoying the fresh air. And since there isn’t supposed to be another day this warm for the foreseeable future, fingers crossed that our electric bill will get a rest between cooling and heating seasons. It can use it, what with the 100% raise in electric rates we had this summer. That’s right, 100%.

Well unfortunately I’ve tasted the thing known as French baguettes.

I’ve had many bakery bought baguettes in the US and they just don’t compare to the real thing. True, it might be impossible to recreate the French taste without the flour and yeast that they use, but I’m willing to give it a shot and see what I can do. 🆒

Salt also gives the dough enough time to develop decent flavour. Saltless bread (or undersalted) rises too quickly for the full flavour to develop, and can make the dough collapse. Unless to bread is a specifically salt-free recipe.

(Runs to shelf to get _The Man Who Ate Everything_)

Salt also strengthens gluten. According to Jeffrey Steingarten, one of my personal Food Pantheon members. I recommend Rose Levy Berenbaum’s _The Bread Bible_ if you’re serious about bread baking. She’s awesome.

So, how warm was the room? I usually do a slow, cool rise over a few hours.
(My credentials are the four batches today- egg breadsticks with chocolate flakes, rice and white, oatmeal, and whole wheat. I love baking bread :D)

Well I have the A/C set to 70F in my place, but I had all the lights on in the kitchen and just passing my hand over the bread on the counter (where there’s bulbs just under the overhead shelves) and I’d guess it was 80F or so.

If I do it again, maybe I’ll start the oven heating and set the bread on top to rise so it gets the heat conducting through a bit.

I’ll look up The Bread Bible.

[One Crazy Summer](http://imdb.com/title/tt0091680/), I’m pretty sure. I probably havne’t seen the movie since it came out but I thought it was good as a 10 year old at least!

Lasagne in the oven - it’s gonna be a good one. I made it extra cheesy and added some spinach and fresh mushrooms. I wish I’d thought earlier to do a loaf of bread machine bread. Oh well.

Clay count today - 2 flower pots with saucers, one funky looking pot thing, and a dog body and head. I also mixed up some white clay with Wild Blackberry stain - I’ll throw something kinda purple tomorrow. I’m done claying for today. In fact, except for dinner, I think I’m pretty much done everything for today. Except supper. I’m starving.

Poor cone kitty… ☹

Oh, dear. When Bailey got made from a male into a female (more or less)(rewiring all his plumbing because of Feline Urinary Syndrome) he had to wear the lampshade for more than a month. And his entire back end was shaved. And he was on Kitty Prozac, so he walked into walls.

He was really, really funny-looking.

I’m sure we’ve got pictures somewhere.
