Presumably a woman with this name can spell it any way she chooses.

There is no standardized way of spelling names in English.

Usually, Sammy/Sammie as a woman’s name is short for Samantha, no?

So there really is no correct spelling for it.

I think Sammi is the most common way, but I’ve seen Sammie also. I imagine that Sammy would be the least popular, except for woman who don’t mind being (or would prefer being) mistaken for a male.
