Shortcake/biscuit, as outlined in my copy of “Out of Old Nova Scotia Kitchens”. It’s in the chapter after the eel and squirrel recipes. ---

I am definitely making some of this soon! I have a strawberry bed and have a ton of frozen strawberries, so all I gotta do is thaw, cook, thicken and slap together the biscuits and whip cream. Jealous?? ---

Generally I use angel food cake, or pound cake, store bought. I don’t care for the strawberries that are available out of strawberry season, I think that they are tasteless. During strawberry season, it’s much too hot to fire up the oven. I also refuse to buy several other fruits and vegetables out of season, because they just don’t taste good. ---

I use the prepackaged rounds. But are they shortcake or sponge cake? If the store is out of the rounds, I use whatever reasonable facsimile the store has, usually angel food cake. As to what you call it, I’m not thinking about that when I’m NOM NOM NOM NOM NOM. ---

The pre-packaged rounds are not shortcake. Shortcake is dry and crumbly. It is a type of biscuit, but really distinct from anything you would find labeled a biscuit in the states.
