# Substitute green onions for white?

The green parts have their own flavor, but it’s good too. And since it’s meatloaf you can add just about anything to it.

When anyone says ‘green onions’ I assume they mean scallions. It doesn’t matter that much if they mean scallions or spring onions, or even shallots or chives.

Some people are very sensitive to raw onion because of something called[fructans](https://en.wikipedia.org/wiki/Fructan), but the green stem of portion of scallions don’t have this while still bringing some of oniony flavor to food.

In my poorest days, during and immediately post college, I probably put some greenish ground beef in the meatloaf. :eek:

All good after a couple of hours in the oven (not taking chances).🙂
