Yeah, the Schwabl’s pictures don’t show it, either, but I’ve never been there. However, I don’t see any jus in any of their videos, either. Now that I think of it technically, the first beef on weck I had was from Anderson’s, but that’s a local chain (like a really good Arby’s), so I wouldn’t expect jus there, anyway. It does look like some places may provide jus for dipping, from what I can see reading around on the internet, but the weck I’ve had has been plenty juicy (the bottom/cut side of the bun was already dipped in the jus) and it was not necessary. I might have to try one with jus on the side next time just for kicks, but I don’t recall it needing any more moisture. ---
