[Escolar](http://en.wikipedia.org/wiki/Escolar). So buttery, so clean, so perfect. So sick for a week from the waxy esters! (Posting this to protect you from the ignorance I had.)

Second favorite was Lobster Newburg in a family-style restaurant in Portland, Maine. Bliss!
