Less oil…?
I’ve tried a few recipes that call for whole or big bone-in pieces, and I didn’t like the results because of the lengthy frying time and abundance of oil. That’s what I’d call real fried chicken, which I like a lot, but it hasn’t turned out well the three or four times I’ve tried making it. I’m sure I could get the hang of it, but for now I prefer the nuggets recipe I posted at the top of this thread. With a short frying time (fillet meat rather than bone-in) and little oil, I get better results with a lot less hassle.
Chickens are too big now. Fried chicken was intended for ordinary non-mutant chickens. In the past couple of years I’ve found them a little smaller on occasion but the breasts are still way to big to fry whole.
