wow, I managed to completely fuck up the coding on that by copying it from my journal.

Derr. Anyway, my italicized items are what I’d like to try but haven’t yet - or asterik items. And I have nothing that I’d never try again.

I guess maybe I need another beer over 8% abv before reading comprehension kicks in. Let me go remedy that.

Eh, I messed mine up too. I italicized everything I have eaten and would try again, instead of bolding it.

> Do some posters here think that headcheese or brawn has something to do with brains? It doesn’t. It’s odds and ends of trimmings, the meat from the cow cheeks, etc., bits too small to go anywhere on their own, cooked in the stock made from the bones and then cooled in a form or pan where the stock gels and sets as aspic around the bits of meat. Of course, it is seasoned.

It’s the cold gelled stock that puts me off. The best use for a dead cow head is to wrap it in wet burlap (or hose it down well with skin intact) and pit roast it, then pick the yummy tiny bits off with your fingers while it’s still hot. Best meat on the whole beast. Why ruin it with cold slime?

Oh, BTW, eyeballs are icky. Even smoky hot eyeballs. Take 'em out when you’re butchering. Please.

Back on topic, I’d try it, but WTF? Dirt is not on my list of probable marvy mouth orgasms, or did google fail me again? (re: kaolin)

> 1. **Tom yum** Looks like something I’ve had. Was very, very spicy. Is that it?

Not usually, no. It’s a Thai soup that’s called hot and sour, but it’s neither as hot nor as sour as Chinese Hot Sour soup. Broth based, with lemongrass, galangal (a sort of Thai ginger root) and kaffir lime leaves - none of which are themselves edible, but lend a great taste to the soup. Mushrooms, still slightly crisp onions and cilantro leaves are usually present, with your choice of chicken, shrimp or tofu optional. Technically, the presence of the meat alters the name, so it becomes Tom Yum Gai (chicken) or Tom Yum Goong (shrimp)

It’s very, very good.

Ah, I hoped I’d see at least one other B-5 fan here!!!😛 Did you see my quote in the OP about bagna cauda?

ivylass, to answer your curiosity about what it is, bagna cauda is a northern Italian hot oil dip.

You take a stick of unsalted butter and half a cup good quality olive oil. Place them in the top of a double boiler and warm together gently. Add mince garlic cloves to taste. (The first recipe I found said four to eight, depending on how strong you wanted it) Let the garlic steep in the oil without letting it burn in the pan. Just before serving add in a tin of anchovy fillets, and stir until they break up.

You can keep it warm in a fondue pot. Have a big plate of chunks of crusty bread and cold crisp veggies for dipping. I like bell pepper strips, small tomatoes, cauliflower and broccoli.

When bagna cauda cools in the fridge it sets up but is soft and spreadable. You can take any that’s left over and spread it on a split loaf of Italian bread and either toast it in the oven, or grill it.

It may be a heart stopper but I think it’s delicious!

It’s not a heartstopper, that is not a particularly bad ratio of unsat and sat fats. It is a healthy food, especially with the fish oil.

(\*Mini-rant-Jeez, that’s one problem I have with the food people on this board, the little propagandas, memes, and health warnings on food items that are actually not that bad.

I think alot of you either have orthorexia or highly distorted nutritional views propogated by the latest medical study.)

I had overlooked this…I was thinking or “roadkill” as “something you just came upon lying dead by the side of the road”. With this in mind, I change my stance on roadkill to “haven’t tried it but would (under certain circumstances)”.

Well, one of my family members helped a lady on the roadside who had hit a deer that did some pretty extensive damage to her car. She didn’t want the carcaass, so he kept it-- State Highway Patrol gave it to him, actually. He took it to a butcher and had it processed for a nominal fee. I remeber it fondly, you’ve never had Hungarian Stuffed Mangoes and Pigs in the Blanket, until you’ve had them made with a mix of venison, fatty ground beef and/or pork.

So I’m the only one who’s had Baijiu?

Remember Cypher’s line about Tank’s moonshine in _The Matrix_? “Good for two things: de-greasing engines and killing brain cells.” That’s a pretty good description. The photo on the wiki page looks more like a bottle of drain cleaner, which should tell you something.

One of my co-workers brought a bottle back as a souvenir from a business trip to Shanghai. I’m far from the heaviest drinker in the office, but I was the only one who’d voluntarily drink it after the first taste. The sensation was unlike anything else I’ve had: I felt like I was literally floating out of my chair. A second glass and I’d probably starting puking my guts out.
