The rules for capitalizing (food) dishes named for their inventor

Chicken Kyiv please. Kiev is the transliteration from Russian, Kyiv from Ukrainian. Yes, they sound the same to western ears, but it was a big thing in Europe at the start of the war.

But if the name of a place changes, does the name of a dish named after that place have to change? Do we now have to call it “Beijing duck,” for example?

Madras curry? Bombay potatoes? Saigon cinnamon? Ceylon tea? Persian cucumbers or limes?

Crab Rangoon?

Which usually contains neither crabs nor rangoons. That one always baffled me. :wink:

Some of the restaurants in my town label it “seafood Rangoon”. I’m not sure if I should applaud them for being honest, or worry that I’m eating aquatic Mystery Meat.
