Upping my chili game

I’m not a big fan of cornbread. I always think it’s going to taste better than it does. But I want to give this recipe a try, rather than the dated and decent recipes from Joy Of Cooking.
The recipe is from Mesa Grill (Bobby Flay).

Blue and Yellow Corn Muffins
6 tbsp unsalted butter
0.5c finely diced red onion
4 cloves garlic, finely chopped
1.33c whole milk
4 large eggs
2 tbsp honey
0.5c finely diced bell pepper
2 jalapeño chiles, finely diced
0.5c corn kernels, fresh/thawed
2 tbsp. cilantro
1c. yellow cornmeal (masa)
1c. blue cornmeal
1.5c. all-purpose flour
1 tbsp. baking powder
0.5 tsp. baking soda
4 tsp. kosher salt
Non-stick cooking spray

  1. Preheat oven to 400F. Grease muffin pan with cooking spray.
  2. In saucepan melt butter, add onion (cook 3-4 mins) then garlic (cook 30 seconds) over medium heat. Divide mixture between 2 bowls.
  3. In another bowl, whisk milk, eggs, honey, peppers, corn, cilantro. Add half to each of the 2 bowls with the onion.
  4. Put blue and yellow masa in separate bowls. To each, add 2/3c flour, 1.5 tsp baking powder, 0.25 tsp baking soda, 2 tsp salt. Mix each masa mix into separate bowls with liquid.
  5. Pour equal amounts yellow and blue batter into each muffin, bake about 16 mins.

Um…would not yellow and blue cornmeal yield green corn muffins?

I’m pretty much a free spirit, but I draw the line at green baked goods.

Cornbread is easy to make in a skillet over a campfire. I think that’s the reason some like it with chili. It’s authentic. That doesn’t make it ideal. A spicier version has more continuity. Few breads are better with much sugar, but small amounts can help with yeast (not a factor in quickbreads) or bring out other flavours (but corn is already sweet).

The idea is to make the yellow and blue mixes separately. And to pour them without mixing. But you could just as easily make one batter of one colour and they’d probably taste the same. Blue cornmeal is kind of purply.

Cornbread, yes. Something like this, made with cream style corn, jalapeno, and cheese.
