Vegans: Easy Recipes/Tips for a Newb

I just got this from my library so I could take a look at it - I’ve already bookmarked a lot of recipes that look good.

My personal challenge is that although do I eat meat I’m trying to cut back on it, and my husband is strictly a meat & potatoes eater. My solution is to eat a vegetarian breakfast & lunch and make a dinner that I can just limit or eliminate the meat portion for myself at dinner. Any tried and true recommendations for “make a whole batch and freeze portions” type recipes are greatly appreciated.

Dr. Righteous, having read great reviews, I bought “Appetite for Reduction”, but had the opposite reaction to yours. I haven’t seen one single recipe that makes me want to bookmark it.

I can’t help but wonder what I’m not seeing. Which ones are you looking at? Have you tried any of them yet? I’d really love to hear how they work out.

Well, I just got it yesterday so I haven’t made anything yet. I bookmarked:
Oven baked onion rings
Brussels sprout potato hash
Mushroom tibs
Herb roasted cauliflower & bread crumbs
40 clove chickpea & broccoli
Creamy mushroom fettuccine
Bistro broccoli chowder
Veggie korma

This weekend is crazy so I don’t know when I’ll be able to actually try any of these.
