Vegetarian sandwiches?

The last time I brought my lunch I had to get sophisticated. I had no idea where I was gonna be located from one day to another.
Bought me a large Igloo a few Ice packs and some different sized containers with lids. Also Ziplock Baggies.
Divided up foods into containers, canned fruit, crackers, tomato chunks, etc…for the week and stuck em in the fridge.
Had small containers for condiments, salt n pepper shakers, Tabasco, etc…
I packed the Igloo from what needed coldest on the bottom to the bread that stayed on top.
I got away from plain white bread and used fresh bread rolls to prepare sandwiches on the spot ,rather than let them soak in mayo all day.

Oh, and don’t forget the Knife, Spoon, Fork and Napkins.

When you have all that stuff handy…you can just start eating fork food and salads. :wink:

How convenient it is to pack a vegetarian lunch depends on where you live, too, I suppose. I’ve been staying in Brighton, UK for a while now, and around these parts they sell loads of ready-made vegetarian stuff, all pretty inexpensive, at the supermarket. As a result, I’ve been pigging out shamelessly on portion-sized cans of hummus, tabbouleh, couscous, felafel, etc. And if you get bored with that stuff, you can always shake things up with bag full of veggie samosas. Britain, what a place: The cars drive on the weird side of the road and everybody tries to run you over, the weather is absolute pants, I’ve yet to spot a single pretty girl that hasn’t turned out to be an Italian tourist, but the food is great.

Many meats, such as Ham or Canadian bacon, or Turkey are very low in fat and high in protein. if you can afford it, so is lean roast beef.

Nothing wrong with eating meat.

Many “veggie” alternatives are more expensive with higher calorie and sodium content.

My way is to increase the fresh veggie component. Ham & cheese, but with generous slices of tomato and lettuce.

Switch to 100% whole wheat bread.
