# Waffle Wednesday

I work in a small office that hires seasonal help for collecting environmental samples during the summer. The summer crews are heading out in a couple of weeks so I suggested we make waffles as a going away breakfast.

I made a triple batch of yeast-raised waffles (so much better than leavened with backing powder!)

Toppings were:  
Peach preserves  
Black Raspberry preserves  
Apple butter  
strawberry’s  
Bananas  
Chocolate chips  
Whipped cream  
Butter  
Peanut Butter  
Maple syrup

One guy brought in tater tots and cooked them in a waffle iron. They were really good. Salsa, sour cream and chives for those.

I would have posted this yesterday but I was in a food coma from eating too many waffles!

Anyone else do this sort of thing at work?

That sounds amazing.

We have pot-lucks in my office fairly regularly. We’re pretty close-knit, so it’s an office-only thing. IOW, people from other units are not officially welcome, though they wouldn’t be turned away if they wanted to participate, because we’re just so nice.

At our last one, I made layered enchiladas. Basically they’re regular enchiladas, but instead of rolling the meat in the tortillas, the tortillas are layered in the pan with the meat in the middle. I add chorizo, a chopped poblano pepper, a chopped onion, and diced green chiles to the ground beef. Pour the enchilada sauce on top, melt a little white cheese, and then sprinkle on some fresh cilantro.

Sounds great! Butter and maple syrup for me, I don’t need those other toppings. Though the sour cream and chives sounds good for the waffled tots (great idea by the way, I bet that’s a lot faster than baking them).

Were these thick Belgian style waffles or thin and crispy Waffle House style waffles?

I used to work for a food company, so each of the labs had a working kitchen. We organized groups of 2 to 4 people, who would be responsible (on a rotating basis) for Friday morning breakfast for about 30 people. We expensed the food, so it wasn’t coming out of anybody’s pocket.

Typical breakfast was scrambled eggs, bacon, tater tots, bagels, cream cheese, smoked salmon, cold cuts, cheeses, juices, etc. One woman had a waffle maker, so she usually did waffles. One time somebody did the makings for breakfast burritos–construct your own–with scrambled eggs, grated cheese, guacamole, bacon, salsa, and some other stuff.

I miss that.

Thin and crispy waffles.

The tots were really good. He had a waffle iron that latched closed so he smashed them down and they got crispy. I will definitely add it to my list of things to make for breakfast!

Were they like hash browns? Did he thaw them out first?

Well, two weeks ago, we had “Pancake Boss” as a fund raiser for the United Way. Government Agency, BTW, so each Branch Head assembled a team, and for five bucks, we could visit the kitchen on each of the four floors we occupy in our tower, eat all we wanted, and vote for the best team.

I voted for the team that had bacon, because you know, bacon buys my loyalty, but the team that did crepes with 15 available toppings won.

On Halloween, we have a chilli cook off, same price, same voting structure - for that one, anyone who supplies corn bread and shredded cheese will get my vote.

We work hard, we eat hard 🙂
