One each 12-pound turkey, brined for a couple of days. Stuff with cornbread made with sage, onions, and celery, softened with chicken broth. Smear the “off-the-roaster” parts of the turkey with a pound of softened salted creamery butter. Weave 2 pounds each of hickory smoked bacon and peppered bacon around the bird; the bacon must be sliced pretty thick. Roast until done. The first and only time I did this the bacon was consumed before the turkey had a chance to be carved. ---

I hope we can continue to feast on the leftovers through the weekend… I always go to someone else’s house for Thanksgiving, which means no leftovers for me. ☹ (Probably a good thing…) ---

Last night I whipped up 3 pies: apple, pumpkin, and pecan. Covered them with dish towels and left them on the kitchen counter overnight. This morning there was a cat footprint in the middle of the apple pie, a footprint in the middle of the pecan pie (drilled all the way to the bottom of the pan) and the towel had been dragged off the pumpkin pie and there were three distinct divots where the cats had each taken up a position doing their best to rid the world of the confection. But it’s all good, cranked out replacements for the pumpkin & pecan, and I got to have apple pie for breakfast. I’ll share the other two (new pies) with you guys. ---

I have several rigid plastic things with vents designed to cover a plate when you microwave the contents. They work very well to keep my pies safe from cats. ---
