What are your go-to Potluck dishes? Need new ideas.

I now also tend to bring fruit trays to potlucks, and rarely have anything left to bring home. I usually stir up fruit dip to bring along - totally negates any feelings of healthiness from eating fruit. Stir together a jar of marshmallow fluff and a tub of whipped lite cream cheese (I use strawberry).

Way back when dinosaurs roamed the earth and shoulder pads were in style, I worked in a deli. My mom was a happy camper whenever I brought home 7-layer salad. It’s now made for summer church potlucks (Lutherans, doncha know):
In a large rectangular glass pan:
Tear up a head of iceberg lettuce
Sprinkle the following over:
A cup or so of peas
Drain / rinse a can of sliced water chestnuts
Dice up a bunch of green onions
Dice up a few stalks of celery
Cover it all with Miracle Whip (NOT mayo)
Top with a mess of crumbled bacon

You must use a glass serving vessel so all the Aunt Gertrudes can ohh and ahh over the layers.

Lately I’ve been bringing Thai Peanut Pasta Salad to get togethers. Nom.

Veggie trays are also popular. Just about any dip will go with veggies. I usually add some sweet pickles and a couple of kinds of olives, if I don’t do deviled eggs too.

I am stealing this. Except I’m going to make a reference to hiphuggers and tiedyes. Because that’s how old I am.

I’m stealing this. Sounds nom-y, indeed.
