You can cook the entire pound of bacon all at once, in the oven. You may need two cookie sheets. I strongly recommend lining them with aluminum foil.
Preheat oven to 400, put bacon slices in single layer on cookie sheets. Bake for approx. 15 minutes, drain on paper towels. Cool and store in refrigerator tightly wrapped or sealed in zip-top bags.
Now you can microwave it for a few seconds to serve hot (with eggs, pancakes, whatever), crumble into salads or on baked potatoes, put on ham and turkey sandwiches, etc.
Bacon sandwiches (cook bacon, toast bread, put bacon on bread and eat… no butter or mayo needed IMO).
Bacon wrapped peppers filled with cream cheese. I’ve had them with jalapenos and red peppers and both work wonderfully. Slice the jalapenos in half & deseed, red peppers you deseed and slice into long thin slices… slice up a block of cream cheese to put in the peppers and wrap with bacon. Cook on the barbecue or in the oven until bacon is done. Eat. (we usually use toothpicks to keep the bacon from falling off).
Really, I’m at a loss to understand how anyone could be at a loss to use up a pound of bacon–just one pound? Really? Bacon cheeseburgers. Spaghetti carbonara. Use it to tart up baked beans. Turkey Hash.
Or just, y’know–bacon! Fried up crisp and munchy. Consumed with fingers, standing up in the kitchen while fighting off the rest of the family with a broom handle. 'Cuz it’s BACON!!!
Place several layers of paper towelling on microwave safe dish. Place raw bacon on towelling. Add another layer of towelling. Microwave until done (roughly 1 minute per slice). Enjoy.
I use damn near a pound of bacon when I make macaroni cheese. It makes about 10 serves - we eat 2 immediately and freeze 2 2-person serves and 4 1-person serves in those handy foil containers.
Not everyone likes that much heat. I found they were just right without the seeds (the first time I had them), my friends found them too hot and so tried red peppers which turned it to our favourite dish.
Lately I’ve been on a tortilla burrito/wrap kick. Anything can be rolled into a tortilla and frozen. Bacon egg & potato or rice would be easy. Some sauteed onion & jalapeno would be a nice addition.
Bacon-wrapped dates, which are as easy as they sound. Wrap each date in a slice of bacon, anchor with toothpick if desired, bake in oven until bacon is crispy.
