To me it tastes sort of like squirrel. I think it is pretty good but like a lot of smaller animals, it is best if parboiled a bit first. The tail is the best. If you roast it right, it is wonderful. ---

It’s one of my favorite tastes, but I’m always either hungry or sleepy afterwards. I love it when the beaver is so wild it just won’t hold still and you have to struggle to keep your mouth on it. ---

I’ve never personally had one, but I hear the taste can be affected by what the beaver has ingested recently. ---
