My current fave is Cambozola–the creaminess of Camembert with a little Gorgonzola kick.

I also like the Irish cheddars that are becoming more popular around here. There’s a fun version with ale and coarse mustard which is pretty addictive.

I went through a phase recently of craving fresh mozzarella with tomatoes and basil, but it’s been a bit too cool for that recently.

Really, the only cheese I’ve had that I didn’t like (aside from tasteless supermarket block stuff) was gjetost, which tasted like fudge gone wrong to me.

The ale/mustard cheddar I’m familiar with is Red Dragon. It’s Welsh, I think. So good.

Could be. I wasn’t paying much attention to the brand and it was in the same section as the Irish ones. I’ll look closer next time.

To eat uncombined, Gruyere.

To eat combined (in omelets, on sandwiches, on crackers) extra sharp cheddar.

I’d love to know if there’s another one with that combination, so please do!

I can only buy Red Dragon online, and it gets enormously expensive that way.

My favorite is Havarti.
Followed by;
Gouda
Fontina
Brie
Fresh Mozzarella, not the eraser-like stuff
Gorgonzola

I like good strong cheeses:

Extra sharp cheddar
Gorgonzola
Stilton
Romano (not just on pasta, but shaved off the block and eaten as is!)
Horseradish cheddar (available in most supermarket delis–at least around here)

In the less strong varieties, Swiss or mozzarella. Or Swiss _and_ mozzarella–packed into a crusty Ciabatta roll and nuked for about 60 seconds.

mmmmm…cheese!
Feta. Or anything feta like.
You simply MUST try “Purple Haze,” a delightfully creamy goat cheese with a strong fennel flavor. It’s like what feta tastes like on Mt. Olympus. It’s also my personal favorite. I think “Cowgirl Creamery” sells it.

If you are willing to trust a total stranger over the internet with your address, then I’ll mail you some. It’s 6 bucks for a 1/3pd mini-wheel.

So far no one has mentioned **Velveeta**?

I love most cheese and wish they were better for you heathwise.

What is the really salty cheese that comes shaped a bit like a pear, is really stringy, and looks like mozerella?

Gotta go with gorgonzola. So good on a salad or on a piece of baguette.

I also have to give a nod to Wensleydale, just because Wallace and Gromit like it 😃

Parano - it’s a Dutch cheese intended to rival Parmesan and Romano. IMHO, better than either for just eating slices of it … or melting into breakfast eggs …
i’m hungry now.

Thank you to all who voted for the cheese of my homeland, gruyère! I grew up near the castle of Gruyères ( [picture](http://www.gruyeres.ch/commune/visite/vis_16-chateau.htm) ) in the village of Gruyères, which is in the district of Gruyère, in the canton of Fribourg, Switzerland. Gruyère is the king of cheeses.
