Many of the very best films do not fit nicely into a specific genre. Is the following really a war movie?
Excellent. And it reminds me of another excellent William Holden movie, The World of Suzie Wong, which in turn reminds me of Sayonara.
One of my very favorite films(*), though again it may not fit into any of OP’s niches. Are Suzie Wong, Sayonara, and Romeo and Juliet in the same genre as Breakfast at Tiffany’s ? :dubious:

Excellent movies keep popping into my head! OP rejects Hitchcock, and I also dislike some of his most famous films but there is much variety in Hitchcock’s work: Dial M for Murder is excellent, as is Rope. Hitchcock’s Vertigo is also good.
Witness for the Prosecution is a good (courtroom thriller? noir?) if OP can tolerate black-and-white.
Gilda is very good — it does help that the leading lady is very easy on the eyes. 
ETA: Doctor Zhivago (1965) hasn’t been mentioned yet? :whack:

I think dr. Strangelove is a unique masterpiece with little or no equals, I would love to be proved wrong
