The long eggs appear to be simply hard-boiled or hard-cooked eggs in a different form. If you consider a hardboiled egg is an “egg dish” than yes, this is an egg dish as well. ---

Please look at how they are actually made. They are not simply eggs that have been stretch out or reshaped. The parts have been separated and reformed to fit a mold. In fact, the article itself calls it a “sophisticated Danish dish”. ---
