[/QUOTE] If you do this, keep the salmon preparation simple: light brush of olive oil, salt and pepper, roast or grill until firm and just flake-able. Maybe sear it first, give it a bit of a crust; the crunchy texture goes very nicely with the creamy yogurt. Ming Tsai has a recipe where he [dusts the salmon with fennel](http://www.ming.com/simplyming/showrecipesSeason3/SearedSalmon.htm) prior to searing, and it’s quite tasty, but also unnecessary, IMO. ---
