Well, I had taught myself some Japanese - I figured out how to read hiragana and katakana and puzzled out simple grammar with the help of websites and books. But then I started taking community college classes so I can no longer claim to be self taught.
I’m somewhat self-taught in Java development. Unfortunately, I don’t really have an object-oriented mind-set (never took any computer science/engineering courses), so I find it difficult to get past the learning stages and use the theory to develop new things.

I taught myself a lot of histoty, sign language about a century ago, okay, more like a decade, but at 19 that feels like a century. Given the quality of my Analytical Chem classes in college, I taught myself that.
History of the Royal Navy in 16th and 17th century, recognition and construction of basic ship types of the time. (It all started with just one Patrick O"Brian book…)
WWII and VietNam war histories. (excluding my Dad’s war stories)

All of them… Country AND Western.
Autoimmune diseases and use of anti-histamines. I know far too much about far too many drugs now.
The history or music?
I’m also gonna try and catch up on basic physics - however nothing beyond simple classical mechanics and basic optics. However note that this is just a loose promise, whereas the others I have actually started in.
Oh, and add essay-writing for me.
I actually taught myself completely from scratch without the help of any of my (lousy) teachers.
I’m like my cat with a new jingle ball when it comes to learning - fascinated for five minutes then it’s back to staring at that spot on the wall.
I have attempted to learn French, Arabic, acoustic guitar, clay sculpture, origami, and crochet. I was successful at none of it. My home is littered with abandoned dictionaries and art supplies.
I am a good cook, but I don’t know if that qualifies as self-taught, since I learned everything from my mother. I love food history and read up on it as much as possible (Reay Tannahill’s Food in History is wonderful).
Beacuse of my work, I have to teach myself all kinds of random things. I know quite a bit about jewelry, specifically pearls. I can talk your ears off about pearls. Recently, I’ve been learning a little about Tibetan art and next I will be teaching myself about Ethiopian art.
